Chiarello’s Bottega restaurant to open December 5th

On Wednesday we noticed the blinders around Chef Michael Chiarello’s long-awaited Yountville restaurant, Bottega, had come down and there was a flurry of activity. Yesterday (Thanksgiving) was much quieter, but the activity level was once again quite high this morning–and for good reason. We’ve just learned that Bottega will officially open for business next Friday, December 5th.

Here are a few of the facts/details on the new Yountville establishment:

  • More than half of Bottega’s wine list will feature local, small-production vintages from California complemented with a solid collection of Italian wines. As we learned when we spoke with Chiarello this past summer, the wine list is reasonably priced and will also feature offerings by the quartino (1 1/2 glasses) as well as sparkling Prosecco by the glass
  • Signature dishes will include Warm Pecorino Cheese “Pudding” with Wood-Oven Roasted Rapini($11); House made Veal Tortellini in Brodo di Carne with Browned Butter($15); Seared Day-Boat Scallops with Pink Chickpea Passatina($26); Grilled Swordfish alla Barcaiola with Ancient Grain Polenta and Celery Herb Insalata($24)
  • Joining Chef Chiarello are Chef de Cuisine Nick Ritchie, Pastry Chef Kristina McDonald, General Manager Joël Hoachuck and Sommelier/Bar Chef Seth Johnson and Victoria D’Amato
  • Dinner will be served Sunday through Thursday from 5:30pm until 9:30pm
  • Dinner will be served on Friday and Saturday from 5:30pm until 10pm
  • Lunch service will begin on December 12, 2008 and will run daily from 11:30am – 2:30pm
